Third Trimester Update

As most of you know, I was diagnosed with gestational diabetes about a month ago. All has been fine so far and my blood sugar has been controlled with the diet changes, thankfully. I basically eat a low carb, very low sugar, high protein and medium fat diet. I’ve found that I can have some carbs (less than 25g per meal) for lunch and dinner, which has been nice. Oddly enough, I feel better than ever, so it seems like it was a blessing in disguise in a way! I’ve come up with a few snacks that are very satisfying in the afternoon. A ton of you have asked for ideas, so I thought I’d share my go to ones here. Lowfat greek yogurt sweetened with monk fruit sweetener and almonds has been great. Also, ham, egg and cheese cups (recipe saved to IG highlights), and a preggo gals charcuterie platter has been a dream! I’ll make cheese, nuts, pickles and raw veggies to dip in ranch dressing and love that! Be sure to check out my IG highlight Gestational Diabetes Food for more ideas.
